Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp salt
  • 2 cups grated carrots
  • 1 cup grated apple
  • 0.5 cup raisins
  • 0.5 cup shredded coconut
  • 0.5 cup chopped walnuts
  • 3 eggs
  • 0.75 cup vegetable oil
  • 2 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F and prepare muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Stir in carrots, apple, raisins, coconut, and nuts.
  4. Whisk wet ingredients and combine with dry ingredients.
  5. Fill muffin cups 3/4 full.
  6. Bake 20–25 minutes and cool on wire rack.

Notes

You can replace half the oil with applesauce for a healthier version.
