- Preheat oven to 350°F and prepare muffin tin.
- Mix dry ingredients in a bowl.
- Stir in carrots, apple, raisins, coconut, and nuts.
- Whisk wet ingredients and combine with dry ingredients.
- Fill muffin cups 3/4 full.
- Bake 20–25 minutes and cool on wire rack.
Notes
You can replace half the oil with applesauce for a healthier version.
