Ingredients
  

Soup Base
  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks chopped
  • 1 cup ditalini pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • salt and pepper to taste

Equipment

  • Large pot or Dutch oven
  • Knife
  • Cutting board
  • Wooden spoon

Method
 

  1. Brown sausage in a pot.
  2. Sauté vegetables until soft.
  3. Add broth and pasta, cook until tender.
  4. Stir in cream and Parmesan.
  5. Season and simmer until thickened.

Notes

Stir frequently while cooking pasta to prevent sticking.
