Ingredients
  

Oatmeal Base
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 2 cups milk dairy or plant-based
  • 2 eggs large
  • 0.33 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 0.5 cup creamy peanut butter
Topping
  • 0.33 cup berry jam strawberry or raspberry
  • 0.5 cup fresh strawberries or raspberries optional diced
  • 2 tbsp chopped peanuts optional topping

Method
 

  1. Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
  2. Mix rolled oats, baking powder, salt, and cinnamon in a large bowl.
  3. In another bowl whisk milk, eggs, maple syrup, vanilla, and peanut butter.
  4. Combine wet and dry ingredients and stir until fully mixed.
  5. Fold in diced berries if using.
  6. Pour mixture into baking dish and spread evenly.
  7. Dollop jam across the surface and swirl lightly with a knife.
  8. Sprinkle chopped peanuts on top if desired.
  9. Bake for 30–35 minutes until set and lightly golden.
  10. Cool slightly, slice, and serve warm.

Notes

This baked oatmeal can be stored in the refrigerator for up to 5 days and reheated for quick breakfasts.
