Method
- Bring roast to room temperature.
- Preheat oven to 450°F.
- Mix seasoning and rub over roast.
- Roast at high heat for 20 minutes.
- Lower heat to 325°F and continue roasting.
- Cook to desired internal temperature.
- Rest 20–30 minutes.
- Slice and serve.
Notes
Use a meat thermometer for best accuracy and let the roast rest before slicing.
