Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup butter melted
  • 2 tbsp sugar
Filling
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
  • 0.5 cup crushed pineapple drained
  • 2 tbsp cornstarch
Topping
  • 1 cup pineapple chunks
  • 0.5 cup pineapple juice
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Equipment

  • Springform pan
  • Mixing bowls
  • Hand mixer or stand mixer
  • Saucepan

Method
 

  1. Preheat oven to 325°F.
  2. Mix crust ingredients and press into pan, bake 10 minutes.
  3. Beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, then vanilla and sour cream.
  5. Fold in pineapple and cornstarch.
  6. Pour into crust and bake 50–60 minutes.
  7. Cool slowly, then chill several hours.
  8. Cook topping ingredients until thick, cool and spread on cheesecake.

Notes

Drain pineapple very well to prevent a watery cheesecake.
