Method
- Preheat oven to 325°F.
- Mix crust ingredients and press into pan, bake 10 minutes.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then vanilla and sour cream.
- Fold in pineapple and cornstarch.
- Pour into crust and bake 50–60 minutes.
- Cool slowly, then chill several hours.
- Cook topping ingredients until thick, cool and spread on cheesecake.
Notes
Drain pineapple very well to prevent a watery cheesecake.
