Muffin Batter
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp cloves
  • 0.25 tsp salt
  • 1 cup pumpkin puree
  • 0.5 cup applesauce
  • 0.5 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.33 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven and line muffin pan.
  2. Mix dry ingredients.
  3. Mix wet ingredients.
  4. Combine wet and dry ingredients.
  5. Fill muffin liners and bake 18–22 minutes.
  6. Cool before serving.

Notes

Do not overmix batter to keep muffins soft.
