Ingredients
  

Peanut Butter Layer
  • 1 cup natural peanut butter
  • 0.25 cup coconut oil, melted
  • 0.25 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 0.5 cup puffed quinoa
Chocolate Layer
  • 1 cup dark chocolate chips
  • Optional toppings: sea salt, extra quinoa, or chopped nuts

Equipment

  • Mixing bowls
  • Muffin tin
  • Microwave or double boiler
  • Spatula

Method
 

  1. Mix peanut butter, coconut oil, maple syrup, and vanilla until smooth.
  2. Fold in puffed quinoa gently.
  3. Line muffin tin with paper liners and spoon peanut butter mixture into each cup.
  4. Melt dark chocolate until smooth.
  5. Spoon melted chocolate over each peanut butter cup.
  6. Refrigerate for at least 1 hour until set.
  7. Remove from liners and serve.

Notes

Optional toppings add extra texture and flavor.
