Method
- Mix peanut butter, coconut oil, maple syrup, and vanilla until smooth.
- Fold in puffed quinoa gently.
- Line muffin tin with paper liners and spoon peanut butter mixture into each cup.
- Melt dark chocolate until smooth.
- Spoon melted chocolate over each peanut butter cup.
- Refrigerate for at least 1 hour until set.
- Remove from liners and serve.
