Ingredients
  

Salad
  • 2 beets peeled and grated
  • 2 carrots peeled and grated
  • 1 apple sliced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • salt and pepper to taste
  • 2 tbsp fresh herbs parsley or mint

Method
 

  1. Grate beets and carrots and place in a bowl.
  2. Slice apple and add to the bowl.
  3. Whisk lemon juice, olive oil, honey, salt, and pepper.
  4. Pour dressing over salad and toss.
  5. Add herbs and mix well.
  6. Serve fresh or chill briefly before serving.
