Ingredients
  

Carrots
  • 1 lb carrots peeled
  • 2 tbsp olive oil
  • salt to taste
  • black pepper to taste
Ricotta
  • 1 cup ricotta cheese
  • 2 tbsp milk or cream
  • 1 tsp lemon zest
Hot Honey
  • 1 tbsp honey
  • 0.5 tsp chili flakes
  • 1 tsp vinegar or lemon juice

Equipment

  • Baking sheet
  • Mixing bowl
  • Food processor or blender
  • Small saucepan

Method
 

  1. Preheat oven to 400°F and line baking sheet.
  2. Toss carrots with oil, salt, and pepper.
  3. Roast for 25–30 minutes until tender.
  4. Blend ricotta with milk and lemon zest until smooth.
  5. Warm honey with chili flakes and acid.
  6. Spread ricotta, top with carrots, drizzle honey.

Notes

Add toasted nuts or herbs for extra texture and flavor.
