Method
- Preheat oven to 425°F and line a baking sheet.
- Boil potatoes in salted water until fork tender.
- Drain and place potatoes on baking sheet.
- Gently smash each potato using a masher or glass.
- Mix melted butter, olive oil, and garlic.
- Brush garlic butter over potatoes.
- Season with salt and pepper.
- Roast 20–25 minutes until crispy.
- Add parmesan during last 5 minutes if desired.
- Garnish with parsley and serve hot.
Notes
Use small baby potatoes for best texture and crispiness.
