Ingredients
  

Potatoes
  • 1.5 lbs baby potatoes
  • 4 tbsp unsalted butter melted
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp parsley fresh chopped
  • 0.25 cup parmesan cheese optional

Equipment

  • Large pot
  • Baking sheet
  • Mixing bowl
  • Potato masher or glass

Method
 

  1. Preheat oven to 425°F and line a baking sheet.
  2. Boil potatoes in salted water until fork tender.
  3. Drain and place potatoes on baking sheet.
  4. Gently smash each potato using a masher or glass.
  5. Mix melted butter, olive oil, and garlic.
  6. Brush garlic butter over potatoes.
  7. Season with salt and pepper.
  8. Roast 20–25 minutes until crispy.
  9. Add parmesan during last 5 minutes if desired.
  10. Garnish with parsley and serve hot.

Notes

Use small baby potatoes for best texture and crispiness.
