Sauce
  • 3 poblano peppers roasted and peeled
  • 1 tbsp butter or olive oil
  • 0.5 onion chopped
  • 2 cloves garlic
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup cheese shredded

Method
 

  1. Roast poblano peppers until charred, then peel and chop.
  2. Cook onion and garlic in butter until soft.
  3. Blend all ingredients until smooth.
  4. Simmer sauce until slightly thickened, then serve.

Notes

Great on chicken, pasta, shrimp, tacos, and enchiladas.
