Ingredients
  

Salsa
  • 6 Roma tomatoes
  • 1 small onion halved
  • 3 cloves garlic
  • 1-2 jalapeños
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 lime juiced
  • 0.25 cup fresh cilantro

Equipment

  • Baking sheet
  • Blender or food processor
  • Knife
  • Cutting board

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Place tomatoes, onion, garlic, and jalapeños on a baking sheet and drizzle with olive oil.
  3. Roast for 20–25 minutes until soft and slightly charred.
  4. Transfer roasted vegetables to a blender.
  5. Add salt, pepper, lime juice, and cilantro and blend to desired consistency.
  6. Taste and adjust seasoning, then serve.

Notes

For extra smoky flavor, roast vegetables on a grill instead of the oven.
