- Preheat oven to 425°F (220°C).
- Place tomatoes, onion, garlic, and jalapeños on a baking sheet and drizzle with olive oil.
- Roast for 20–25 minutes until soft and slightly charred.
- Transfer roasted vegetables to a blender.
- Add salt, pepper, lime juice, and cilantro and blend to desired consistency.
- Taste and adjust seasoning, then serve.
Notes
For extra smoky flavor, roast vegetables on a grill instead of the oven.
