Ingredients
  

Salad
  • 2 cups cooked chicken breast sliced or shredded
  • 4 cups mixed salad greens
  • 2 oranges peeled and segmented
  • 1 cup shredded carrots
  • 1 cup cucumber thinly sliced
  • 2 green onions sliced
  • 2 tbsp sesame seeds
  • 0.25 cup sliced almonds optional
Sesame Ginger Dressing
  • 3 tbsp olive oil
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp fresh orange juice
  • 1 tsp orange zest
  • 1 tsp fresh ginger grated
  • 1 clove garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

Method
 

  1. Prepare cooked chicken by slicing or shredding.
  2. In a large bowl combine salad greens, carrots, cucumber, and green onions.
  3. Add chicken and orange segments on top of the salad.
  4. Sprinkle sesame seeds and sliced almonds over the salad.
  5. Whisk olive oil, sesame oil, soy sauce, rice vinegar, honey, orange juice, zest, ginger, garlic, salt, and pepper.
  6. Drizzle dressing over salad just before serving.
  7. Toss gently to combine and serve immediately.

Notes

Add avocado or crispy noodles for additional texture and flavor.
