- Preheat oven to 400°F (200°C) and line a sheet pan with parchment.
- Toss cubed sweet potatoes with olive oil and spices on the sheet pan.
- Roast sweet potatoes for 10 minutes.
- Season chicken with lemon juice, zest, garlic, and oregano.
- Add chicken to the sheet pan beside the sweet potatoes.
- Roast 20–25 minutes until chicken is cooked through.
- Blend avocado, yogurt, olive oil, lemon juice, garlic, and herbs until smooth.
- Add water to thin the sauce if needed.
- Serve roasted chicken and sweet potatoes drizzled with avocado sauce.
