Ingredients
  

Chicken and Sweet Potatoes
  • 4 boneless chicken thighs
  • 2 sweet potatoes cubed
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lemon juiced and zested
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp dried oregano
Avocado Goddess Sauce
  • 1 avocado ripe
  • 0.5 cup Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic
  • 2 tbsp parsley fresh
  • 2 tbsp cilantro fresh

Method
 

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment.
  2. Toss cubed sweet potatoes with olive oil and spices on the sheet pan.
  3. Roast sweet potatoes for 10 minutes.
  4. Season chicken with lemon juice, zest, garlic, and oregano.
  5. Add chicken to the sheet pan beside the sweet potatoes.
  6. Roast 20–25 minutes until chicken is cooked through.
  7. Blend avocado, yogurt, olive oil, lemon juice, garlic, and herbs until smooth.
  8. Add water to thin the sauce if needed.
  9. Serve roasted chicken and sweet potatoes drizzled with avocado sauce.

Notes

Add extra vegetables like broccoli or zucchini for variety.
