Method
- Season brisket with salt, pepper, and paprika.
- Sear brisket in olive oil until browned on both sides.
- Cook onions and garlic in the same pot until softened.
- Add broth, tomato paste, Worcestershire sauce, brown sugar, thyme, and bay leaves.
- Return brisket to pot and cover with liquid.
- Cook slowly for 3–4 hours in oven or 6–8 hours in slow cooker.
- Rest brisket before slicing against the grain.
- Serve sliced brisket with sauce.
