Ingredients
  

Filling
  • 1 can chickpeas drained and rinsed
  • 1 avocado ripe
  • 0.33 cup dill pickles chopped
  • 2 tbsp red onion diced
  • 1 tbsp fresh dill
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 0.5 tsp garlic powder
  • salt and pepper to taste
Assembly
  • 4 slices bread

Method
 

  1. Mash chickpeas in a bowl until slightly chunky.
  2. Add avocado and mash until creamy.
  3. Mix in pickles, onion, dill, lemon juice, olive oil, and seasonings.
  4. Spread onto bread slices and assemble sandwich.

Notes

Best served fresh. Add lemon juice to prevent browning.
