Ingredients
  

Soup
  • 1 cup red lentils rinsed
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic
  • 1 carrot diced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp turmeric
  • 0.5 tsp chili flakes optional
  • 4 cups vegetable broth
  • 2 cups water
  • 2 cups spinach
  • 0.5 lemon juiced

Method
 

  1. Sauté onion and garlic.
  2. Add carrots and spices.
  3. Add lentils, broth, and water.
  4. Simmer until lentils are soft.
  5. Blend if desired, then add spinach and lemon.
  6. Serve warm.

Notes

Adjust thickness with extra broth. Add coconut milk for creaminess.
