- Preheat oven to 350°F (175°C). Prepare pie crust in dish.
- Whisk sugar and melted butter together.
- Add eggs one at a time, mixing well.
- Stir in buttermilk, lemon juice, and vanilla.
- Mix in flour, cornmeal, and salt until smooth.
- Pour filling into crust.
- Bake 45–55 minutes until set with slight jiggle.
- Cool completely before slicing and serving.
Notes
For best flavor, use real buttermilk and allow pie to cool fully before slicing.
