  • 1.5 cups granulated sugar
  • 0.5 cup unsalted butter melted
  • 3 eggs large
  • 1 cup buttermilk
  • 1 tbsp all-purpose flour
  • 1 tbsp cornmeal optional
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 1 pie crust unbaked

Method
 

  1. Preheat oven to 350°F (175°C). Prepare pie crust in dish.
  2. Whisk sugar and melted butter together.
  3. Add eggs one at a time, mixing well.
  4. Stir in buttermilk, lemon juice, and vanilla.
  5. Mix in flour, cornmeal, and salt until smooth.
  6. Pour filling into crust.
  7. Bake 45–55 minutes until set with slight jiggle.
  8. Cool completely before slicing and serving.

Notes

For best flavor, use real buttermilk and allow pie to cool fully before slicing.
