Spicy Jalapeño Cheddar Tuna Melt

Ingredients
  

Tuna Filling
  • 2 cans tuna 5 oz each, drained
  • 0.25 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 celery stalk finely diced
  • 2 tbsp green onion chopped
  • 1-2 jalapeños thinly sliced
  • 1 cup cheddar cheese shredded
Sandwich
  • 4 slices bread
  • 2 tbsp butter softened
  • 0.25 tsp garlic powder
  • 0.25 tsp black pepper

Equipment

  • Mixing bowl
  • Skillet or frying pan
  • Spatula
  • Knife

Method
 

  1. In a bowl combine tuna, mayonnaise, Dijon mustard, lemon juice, celery, green onion, garlic powder, and black pepper.
  2. Stir in half of the sliced jalapeños.
  3. Spread the tuna mixture on two slices of bread.
  4. Top with shredded cheddar cheese and remaining jalapeños.
  5. Close the sandwiches with remaining bread slices.
  6. Butter the outside of each slice of bread.
  7. Cook in a skillet over medium heat for 3–4 minutes per side until golden and cheese melts.
  8. Slice and serve warm.

Notes

Add avocado slices or tomato for extra flavor and texture.
