Ingredients
  

Sago Base
  • 0.5 cup sago pearls
  • 2 cups water for cooking
Matcha Layer
  • 1 tsp matcha powder
  • 0.25 cup hot water
Strawberry Layer
  • 1.5 cups fresh strawberries blended
Cream Base
  • 0.75 cup coconut milk
  • 0.25 cup sweetened condensed milk
  • 2 tbsp sugar optional
  • 0.5 tsp vanilla extract
  • pinch of salt

Equipment

  • Strainer
  • Blender
  • Mixing bowls

Method
 

  1. Cook sago pearls in boiling water until translucent, then rest covered.
  2. Drain and rinse sago under cold water.
  3. Whisk matcha with hot water until smooth.
  4. Blend strawberries into a smooth purée.
  5. Mix coconut milk, condensed milk, sugar, vanilla, and salt.
  6. Divide cream mixture and mix separately with matcha and strawberry.
  7. Layer sago, strawberry mixture, more sago, then matcha mixture in glasses.
  8. Chill and serve cold.

Notes

For best presentation, use clear glasses to show layers.
