Sweet Potatoes
  • 2 sweet potatoes diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • salt and pepper to taste
Beef
  • 1 lb ground beef
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • salt and pepper to taste
Street Corn
  • 2 cups corn
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1/2 cup feta or cotija cheese
  • 1 tbsp lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
Assembly
  • cilantro chopped
  • lime wedges

Method
 

  1. Roast sweet potatoes at 425°F for 25–30 minutes.
  2. Cook ground beef with spices until browned.
  3. Mix corn with mayo, cream, cheese, lime, and spices.
  4. Assemble bowls with sweet potatoes, beef, and corn.
  5. Garnish with cilantro and lime before serving.
