Ingredients
  

Chili
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 cups cooked shredded chicken
  • 2 cans white beans drained and rinsed
  • 1 can green chilies
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp chili powder
  • 3 cups chicken broth
  • 4 oz cream cheese softened
  • 0.5 cup heavy cream
  • salt to taste
  • black pepper to taste
  • 1 lime juiced

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until soft, then add garlic and cook briefly.
  3. Add chicken, beans, green chilies, and spices.
  4. Pour in broth and simmer for 15 minutes.
  5. Stir in cream cheese until melted.
  6. Add heavy cream and simmer until thickened.
  7. Season with salt, pepper, and lime juice before serving.

Notes

For a thicker chili, mash some beans. Adjust spice level with jalapeños or cayenne.
