Ingredients
  

Salad
  • 4 cups broccoli florets
  • 1 apple diced
  • 0.25 cup red onion finely chopped
  • 0.5 cup dried cranberries
  • 0.5 cup walnuts toasted and chopped
  • 0.5 cup vegan mayonnaise or cashew cream
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar or lemon juice
  • to taste salt and pepper

Method
 

  1. Chop broccoli into florets.
  2. Dice apple and toss with lemon juice to prevent browning.
  3. Whisk together vegan mayonnaise, maple syrup, and apple cider vinegar.
  4. Combine broccoli, apple, red onion, cranberries, and walnuts in a large bowl.
  5. Pour dressing over salad and toss gently to coat.
  6. Chill 15–30 minutes if desired before serving.

Notes

Add apples just before serving to maintain freshness.
